Raw Recipe; Southern Style Coconut Biscuits

So you thought when you made the raw food switch, you would have to give up your favorite Southern comfort foods? Well, this simple but delicious recipe will rival any homemade biscuit and you will be doing something "good" for your body and soul.
2 cups of raw dehydrated coconut ( Wilderness Family Naturals fine shredded coconut is recommended)
1/2 cup of flax meal (ground flax seed)
2 tablespoons of cold pressed olive oil.
1/2 teaspoon of salt of to taste
First, put the coconut oil in a high powered blender. I use the Vitamix brand and it works beautifully. Next, add about three cups of water or enough to cover the coconut. Let this mixture sit for about thirty minutes . ( If you are using a regular blender, you may need to let the coconut soak for about an hour.)Then add the remainder of your ingredients and blend until it is a smooth creamy consistency. It should look like a thick pancake batter. If needed, add a little more water.
Next, pour this mixture on a teflex lined dehydrator sheet and dehydrate for about three hours at 105 degrees or until slightly dry to the touch. Carefully flip the mixture over and dry another several hours or until it is a "cake like" consisistencey. Using a round cookie cutter or the ring from a small Mason jar lid , carefully cut out your biscuits. If they are too thin, you can stack two together to reach the desired thickness.
These are delicious served with raw fruit jam or your favorite raw sausage recipe!
